Cha Trob Sach Chrouk: minced pork with grilled eggplant

Ingredients
- 200 gr eggplant
- 50 gr minced pork
- 1/2 tbsp fish sauce
- 1 tbsp oyster sauce
- 25 gr palm sugar
- 10 ml vegetable oil
- 2 gr chopped garlic
- 1 tsp salt
- 5 gr tomato ketchup
- 3 gr sliced spring onion
Instructions
- o Grill aubergines until brown, peel off the skin.o Heat the oil in a skillet, add the garlic and sauté on low heat until golden brown.o Add the minced pork, stir until cooked.o Add tomato ketchup, oyster sauce and fish sauce. Continue stirring.o Add salt and sugar, stir continuously and let simmer for 10 minutes. Adjust the seasoning to taste if needed.o Put the grilled eggplants in a bowl and place the pork on top.o Garnish with chopped spring onion. Ready to serve.
