Nhaom krouchtrong: Chicken pomelo salad

Pomelos in cambodia are more sour than sweet, so reduce the sugar in the dressing if you are using sweet pomelo if pomelo are not available, grapefruit can be substituted, but more sugar may need to be added to the dressing.

  • 1 each pomelo fruit
  • 1 tbsp peanuts, toasted, chopped
  • 10 gr red cabbage julienne
  • 10 gr carrot julienne
  • 10 gr white cabbage
  • 10 pc sweet basil
  • 10 gr glass noodle (socking in cool water)
  • 100 gr chicken breast (in small piece)

Khmer dressing

  • 10 gr shallot chopped
  • 10 gr garlic chopped
  • 10 gr chili finger
  • 40 gr lime juice
  • 5 gr salt
  • 5 gr palm sugar
  • 5 gr fish sauce


  • In a sauce pan put palm sugar then add shallot, garlic, chili finger stir until good smell put a bit good water sweet chili, fish sauce, palm sugar, salt, late it boiling for 2 minute, then remove from the heat keep it a bit cool add lime juice, and then adjust seasoning to taste.
    Peel the pomelo. Remove the fruit. Break it into small pieces.
    Combine all of the ingredients together in a mixing bowl. Mix well. Place in a bowl and serve.
