Char Kyei,Trei : Stir fried chicken with ginger

  • 1 L vegetable oil, for frying
  • 150 gr ginger, peeled, very thinly sliced
  • 2 tbsp vegetable oil, for stir frying
  • 1 tbsp garlic, chopped
  • 250 gr sliced chicken breast
  • 1 piece white onion, sliced
  • 60 ml chicken stock
  • 1 tbsp fish sauce
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tsp salt
  • 1 tbsp sugar
  • 30 gr spring onion, cut into sticks


  • 1. In a saucepan, heat 1 L of vegetable oil to 170 ° C. Fry the ginger slices in the oil until crisp. Remove from the oil using a fine strainer. Place on paper towels.
    2. Heat the vegetables in a wok or saucepan over medium heat. Add a little vegetable oil if needed. Then add the garlic and sauté until the vegetables are golden brown.
    3. Add chicken, onion and chicken broth.
    4. Season the chicken with fish sauce, soy sauce, oyster sauce, salt and sugar.
    5. When the chicken is cooked, add the fried ginger and onions. Serve with steamed rice.
