Khmer Curry Paste
This is the recipe for basic Khmer curry paste. There are hundreds of recipes using curry paste in Khmer cuisine. To make green or yellow curry paste, add the tops of lemongrass leaves to the below recipe.

- 200 gr lemongrass thinly sliced
- 1 piece tumeric fresh peeled & sliced
- 4 peces garlic chopped
- 2 pieces kaffir lime leaf
- 1 piece galangal
- 1 piece smal red chili
- 1. The first step is that you put all of ingredients together in a pastel & Mortar muss until they become paste.2. Second step put all of the ingredients in a food processor with some water. Blend until is fine. The curry paste can be kept in the refrigerator for a week.
